Siguiendo con las diferentes alternativas para realizar una tarta saludable y deliciosa les dejamos una rica receta de un delicioso Bizcocho de Zanahoria.
Como sabemos la Zanahoria forma parte del grupo de alimentos con más beneficios para nuestra salud, según señala la OMS en varios de sus informes, por lo que recomienda su consumo.
De la zanahoria sabemos que beneficia nuestra vista y la salud de nuestra piel, pero su composición rica en vitaminas y minerales reporta otros muchos beneficios para nuestro organismo.
Por todo esto y mucho más hemos decidido realizar un bizcocho de zanahoria los ingredientes son muy fáciles de conseguir en el mercado. Es ideal para las meriendas de los peques en casa y los puedes acompañar con un té o café y para los peques es ideal porque aunque sea un dulce tiene incorporado la zanahoria.

Bizcocho de Zanahoria
Ingredientes
Para el bizcocho:
- 300 gr Zanahoria rallada
- 200 gr De harina de trigo
- 1/4 cdta De cucharadita de sal
- 3 cdta De levadura química (polvo para hornear)
- 1 cda De canela
- 3 Huevos
- 200 gr De azucar
- 100 ml De aceite de girasol
- Esencia de vainilla
- 1/2 taza De nueces picadas
Para la cobertura:
- 250 gr De queso crema
- 100 gr De azúcar glass
- 60 gr De mantequilla
- Esencia de vainilla
Elaboración paso a paso
Para el bizcocho:
- Precalentar el horno a 180°C, con calor arriba y abajo.
- Tamizar la harina, la sal, la levadura química y la canela. Incorporar la zanahoria rallada y mezclar bien hasta que la zanahoria empiece a absorber la harina.
- En otro recipiente, batir los huevos con el azúcar hasta que espumen. Añadir el aceite y la esencia de vainilla, mezclar bien hasta que el aceite se integre.
- Incorporar la mezcla de zanahoria con una paleta hasta que se vuelva homogénea. Añadir las nueces picadas.
- Engrasar con mantequilla y harina un molde y verter la preparación.
- Hornear durante 40-45 minutos.
- Dejar enfriar y cubrir con la cobertura.
Para la cobertura:
- Añadir el queso crema y la mantequilla a temperatura ambiente en un bowl. Batir hasta que se mezclen bien.
- Incorporar el azúcar glass poco a poco para que se integre bien. Añadir la esencia de vainilla y batir hasta que esté cremoso y bien incorporado.
